Amazing Sugarless Fatless Cake
Ingredients: -
230g/8oz - cooking dates, not sugar rolled
300ml/10oz - water
450g/1lb - mixed dried fruit
175g/6oz - plain wholemeal flour
45ml/3 tbsp - baking powder
15ml/1 tbsp - carob powder (from health food shop)
5ml/1 tsp - mixed spice
60ml/4 tbsp - orange juice
25g/1oz - ground almondsgrated rind of one orange or lemon
a few flaked almonds for top
Method: -
Set oven at 160ºC/325ºF/gas mark 3.
Grease 900litre/2lb loaf tin and line with greaseproof paper and grease the paper that will touch the cake mixture.
Put the dates and water into a saucepan and heat gently.
Remove from the heat and mash the dates.
Add all other ingredients and mix well.
Spoon the mixture into the tin and sprinkle the almonds on the top.
Bake for 1½ hours
