Homemade Fish Stock

(This is not a soup)

Ingredients: -

Bones and trimmings from fish

1 - onion, sliced

2 - carrots, chopped

1 - leek, chopped6 - peppercorns

900ml/1½ pints - water

300ml/½ pint - white wine

1 - bouquet garni

Method: -

Place bones and trimmings from the fish into a saucepan with 900ml/1½ pints of water

.Add the onion, carrots, leek, wine and the bouquet garni to the pan.

Bring gently to the boil and simmer for 30 minutes.

Add 6 peppercorns for the last 10 minutes.

Strain.

Makes 1¼ litres/2 pints
