Pork cooked in Cider, Apples and Peppers
Ingredients: -
600g/1lb 6oz - lean pork, 12mm/½" thick slices
2 - small onions, chopped
4 - eating apples
1 - red pepper, de-seeded and cut into thin slices
1 - green pepper, de-seeded and cut into thin slices468ml/
1 pint - medium sweet cider
300ml/½ pint water
30ml/2 tbsp - sunflower oil
15ml/1 tbsp - plain flour
10ml/2 tsp - salt
10ml/2 tsp - ground pepper
Method: -
Heat the sunflower oil in a frying pan and lightly fry the onions until golden brown, place in a casserole dish.
Lightly fry the pork in the same oil until slightly brown on each side and place in the casserole dish.
Add flour, salt, pepper to the remaining juices in the frying pan, stirring all the time to make a roux.
Slowly add the cider, stirring all the time.
Pour over the pork and onions.
Top up the liquid with water.
Add the apples and peppers.
Cover casserole dish and bake at 170°C/325°F/gas mk 3 for about 2 hours or until the pork is tender.
Serve hot.
Accompany with carrot sticks, cauliflower.
Nice with new potatoes!
